Bill Gates-Backed Startup Creates Dairy-Free Butter Using Carbon Dioxide

A California-based company has developed a novel method of making butter without milk. Bill Gates, a billionaire businessman, founded the startup to find dairy-free milk, cheese, and ice cream alternatives. According to multiple media reports, a company called Savour has developed a method of producing butter using carbon dioxide, hydrogen, and oxygen. They use a thermochemical process to convert these gases into fat molecules. The company does not need a firm to run its operations because its experimental animal-free products can be processed in the laboratory.

Despite carbon dioxide, Savour claims their newly invented butter will not harm the environment. Instead, it produces less than 0.8g CO2 equivalent per kg, whereas one kg of unsalted traditional butter produces 16.9kg CO2. Regarding taste, the startup claims that the dairy-free butter is identical to the original.

Bill Gates has also endorsed the concept. “Switching to lab-made fats and oils may initially appear strange. However, their potential to significantly reduce our carbon footprint is enormous. “We are one step closer to achieving our climate goals by leveraging proven technologies and processes,” the Microsoft co-founder wrote in an online blog, according to The Indian Express.
